Vegan Chickpea Mushroom Balls

They’re so cute and savory ! No need for eggs as a binder, these Vegan Chickpea Mushroom Balls are naturally vegan. You can easily adjust the seasoning before cooking as there are no raw eggs involved. I like to serve a classic Hummus and seasonal roasted vegetables on the side. After making this recipe, I found this recipe that uses the same basic ingredients but also adds sage and fresh rosmary for a festive Christmas vibe.

Vegan Chickpea Mushroom Balls

Vegan Chickpea Mushroom Balls

Ingredients

  • 1 tbsp chia or flex seeds
  • 100 g mushrooms 'chamignon de Paris'
  • 2 tbsp soy sauce
  • 1 garlic clove
  • 1/2 white oignon
  • 400 chickpeas canned, drained
  • 2 tbsp oats
  • 2 tbsp sunflower seeds, roasted
  • 1 tbsp cashew or peanuts, roasted

Seasoning

  • herbes de Provence
  • smoked paprika
  • salt

Crust

  • sesame seeds and/or breadcrumps
  • Oil for baking

Instructions

  1. Heat your convection oven to 180°C.
  2. In a a large bowl, make a “flax egg” by combining 1 tbsp flax or chia seed and 3 tbsp warm water and letting it sit until it gels.
  3. Cut mushrooms in quarters and dry roast in a pan for a couple of minutes. Turn off the heat and let infuse with soy sauce.
  4. Mix garlic and oignon in a blender until there are still pieces left, add to bowl.
  5. Mix chickpeas but keep chunks, add to bowl.
  6. Mix mushroom with all the other ingredients, add to bowl.
  7. Season your mixture with herbes de Provence, smoked paprika and salt.
  8. Press the mixture into balls with your hands, place in a baking dish and then cover and roll in breadcrumps and/or sesame seeds.
  9. Top with some oil and bake until crisp and brown.
