Tarator – Cold Bulgarian Yogurt Soup

Tarator is a refreshing, traditional bulgarian soup based on the combination of yogurt and cucumbers. It’s maybe one of the easiest and most popular summer dishes at our home. It is extremely easy to make, and it can stand alone as a refreshing appetizer.

You can add as much or as little of each component as you would prefer to taste. Do not add too much water as the cucumbers will release a lot of liquid.

What is the difference between tarator and tzatziki?

They both contain very similar ingredients like cucumbers, yogurt, garlic and dill. However, Tarator is usually made with cubed cucumbers while tzatziki sauce is made with shredded cucumbers. Tarator is thinned with water into a soup-like consistency, where tzatziki stays thick. Tarator is often topped with nuts while tzatziki is not.

Storing Leftovers

You can store your tarator in the fridge for up to 3 days. Keep it in an airtight container, and make sure to stir it up before serving. I find it very convenient and space saving to prepare a thick tarator, store in the fridge and dilute with ice cold water right before serving.

Yield: 4 servings

Ingredients

  • 1 large cucumber
  • 500 ml plain yogurt
  • ice cold water as needed
  • 1 garlic clove finely chopped
  • 2 tablespoon olive oil
  • 1 tablespoon fresh dill chopped
  • 2 tablespoon peanuts chopped
  • salt to taste
  • ice cubes

For serving

  • extra nuts, dill, oilve oil and cucumber cubes

Instructions

    1. Peel the cucumbers and remove any seeds (opt), cut into fine cubes or grate if you're busy. Put some pretty cucumber cubes aside for serving.
    2. In a large bowl combine yogurt and a little bit of cold water. Mix very well until smooth.
    3. Combine the yogurt with all the other ingredients, adapt to your taste and desired consistency.
    4. Allow it to chill 30 minutes or more for the best results.
    5. Spoon into bowls, add some ice cubes if you like it extra cold, and garnish with nuts, olive oil, and dill.
