Carrot Cake with Mango Yogurt Frosting

Ingredients

  • 250 g grated carrots
  • 3 large eggs
  • 60 g maple syrup
  • 120 g neutral oil
  • 120 g plain Greek yogurt
  • Zeste half lemon
  • 100 g poudre d'amande
  • 300 grams flour
  • 50 g roasted hazelnut chopped
  • 1 tsp baking powder
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon sea salt

Frosting :

  • 150 g greek yogurt
  • half a mango

Instructions

    1. Grate carrots, add some drops of lemon juice to stop oxydization
    2. Mix the dry ingredients.
    3. In another bowl, mix the wet ingredients.
    4. Then fold everything together with the carrots without overmixing.
    5. Bake at 180 degree for 25 minutes.
    6. Mix the yogurt with the mango.
    7. Let cool and add the frosting
