Vegan Peanut Butter Bars – baked in an ice cube tray

These peanut butter bars are super quick and easy to prepare in just one bowl and taste like American peanut butter cookies, even though the recipe is healthier and vegan! The peanut butter bars are crispy on the outside, soft and chewy on the inside.

The dough is baked baked in a silicone ice cube tray for the perfect peanut bar shape. No need to form the dough by hand. The sweetness comes from half maple syrup half dried raisins. I prefer chopped up yellow raisins to give a hint of sweetness without being too dominant. They are inspired by the Vegan Peanut Butter Cookies from Bianca Zapatka ! Wrap your peanut butter bars in a box for the perfect homemade present and keep up to one week.
