Carrot Cake with Mango Yogurt Frosting

Ingredients
- 250 g grated carrots
- 3 large eggs
- 60 g maple syrup
- 120 g neutral oil
- 120 g plain Greek yogurt
- Zeste half lemon
- 100 g poudre d'amande
- 300 grams flour
- 50 g roasted hazelnut chopped
- 1 tsp baking powder
- 1 tablespoon ground cinnamon
- ¼ teaspoon sea salt
Frosting :
- 150 g greek yogurt
- half a mango
Instructions
- Grate carrots, add some drops of lemon juice to stop oxydization
- Mix the dry ingredients.
- In another bowl, mix the wet ingredients.
- Then fold everything together with the carrots without overmixing.
- Bake at 180 degree for 25 minutes.
- Mix the yogurt with the mango.
- Let cool and add the frosting
