Chocolate Chunk Pear Cake (Sugarfree)

Inspired by every French kid’s favorite cake “Gâteau au yaourt” (A No-Measure Cake)

This moist and fruity naturally sweet Chocolate Chunk Pear Cake does not need extra sugar. It’s based on the french “gâteau au yaourt” (yogurt cake) which is a super simple no-measure cake. It’s the first dessert we learn how to bake as a kid in France, the cake we bring to birthday’s parties, the cake we prepare on a lazy day or at the last minute (no need to grab a scale or a measuring cup). In a word, it’s the perfect basic cake recipe that never fails and never disappoints.

What makes it better than your average yogurt cake ?

  • Replacing the sugar with pears adds a fruity, moist and flowery flavor to the cake and removes the bland sweet stickiness of industrial sugar
  • Chocolate chunks add hints of sweet and bitter chocolate bites
  • Almond flour adds richness to the texture and it’s also incredibly nutritious

Naturally Sweet Chocolate Chunk Pear Cake inspired by the French “Gâteau au yaourt” (A No-Measure Cake)

Ingredients

  • 3 eggs
  • 1 yogurt
  • 1 yogurt container filled with neutral oil
  • 2 yogurt containers filled with flour
  • 1 yogurt container filled with almond powder
  • 1 packet of baking powder
  • 4 small or 2 big ripe pears, peeled, cored, and cut into cubes
  • 100 g chocolate drops

Instructions

  1. Preheat the oven to 180°C.
  2. Mix eggs, yogurt, and oil for 20 seconds.
  3. In another bowl mix flour, almond flour, and baking powder.
  4. Mix with the egg mixture and gently fold the diced pears and the chocolate into the batter.
  5. Pour the batter into a prepared cake pan and spread it evenly. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool completely because the cake will be very fluffy and fragile after baking.

Notes

For simplicity, we use a yogurt container to measure ingredients.
