Ingredients

  • stale bread, crostini or whatever you have at hand
  • nuts like cashews, pistacchios or almonds are optional
  • olive oil or butter
  • minced garlic
  • flavorings like dried oregano, thyme, rosemary, chili
  • sea salt

Instructions

To make pangrattato, stale bread and nuts are grated or processed in a food processor into coarse breadcrumbs. These are then toasted in a skillet with olive oil or butter and garlic until they become golden brown and crispy. Add herbs and salt to enhance the flavor, The mixture is stirred constantly to ensure even toasting and prevent burning.

Allow the pangrattato to cool completely before transferring it to an airtight container. It can be stored at room temperature for a week or so.
