Semolina pudding with chia pear compote is inspired by the German “Griessbrei”. It’s a delicious dessert but also makes a great quick breakfast for busy mornings. Pears add a sweet and fruity flavour and together with the chia seeds form a quick compote ready in just 5 minutes.

Ingredients
Pudding
- 400 ml milk of choice
- 40 g semolina
- une pincée de sel
Compote
- 1-2 ripe pears, peeled
- 1/2 tsp chia seeds
- milk of choice (coconut milk is nice)
Instructions
Pudding
- Heat the milk with a pinch of salt.
- Whisk in the semolina and cook for one more minute.
- Set aside to cool.
Compote
- Pop the pears in the microwave for 40 seconds.
- Mash the pears and mix with chia seeds and milk.
- Pour over the semolina pudding and enjoy.
