Semolina pudding with chia pear compote is inspired by the German “Griessbrei”. It’s a delicious dessert but also makes a great quick breakfast for busy mornings. Pears add a sweet and fruity flavour and together with the chia seeds form a quick compote ready in just 5 minutes.

Ingredients

Pudding

  • 400 ml milk of choice
  • 40 g semolina
  • une pincée de sel

Compote

  • 1-2 ripe pears, peeled
  • 1/2 tsp chia seeds
  • milk of choice (coconut milk is nice)

Instructions

Pudding

  1. Heat the milk with a pinch of salt.
  2. Whisk in the semolina and cook for one more minute.
  3. Set aside to cool.

Compote

  1. Pop the pears in the microwave for 40 seconds.
  2. Mash the pears and mix with chia seeds and milk.
  3. Pour over the semolina pudding and enjoy.
