These peanut butter bars are super quick and easy to prepare in just one bowl and taste like American peanut butter cookies, even though the recipe is healthier and vegan! The peanut butter bars are crispy on the outside, soft and chewy on the inside.
The dough is baked baked in a silicone ice cube tray for the perfect peanut bar shape. No need to form the dough by hand. The sweetness comes from half maple syrup half dried raisins. Vegan Peanut Butter Bars
Baked in An Ice Cube Tray
Ingredients
Dry
- 80 g flour
- 60 g rolled oats
- ½ tsp baking powder
- 40 g yellow dried raisins, chopped
- a pinch of salt
Wet
- 100 g peanut butter
- 40ml maple syrup
- 30 ml plant-based milk + a little more for brushing
Topping
- 20 g salted peanuts, roughly chopped
Instructions
- Preheat the oven to 180°C with both upper and lower heat.
- Sift the flour into a large mixing bowl, add all the dry ingredients and mix everything together.
- Now, add the wet ingredients, stir everything together to form a dough.
- Add the dough to a rectangular ice cube tray and flatten them with your hands
- Brush the cookies lightly with plant-based milk, then gently press peanuts into the dough.
- Bake in the preheated oven for about 25 minutes.
- After baking, let the peanut bars cool completely.
